Cooking courses
CUINA DE TOSSA: We hold a cooking course one afternoon a week. Two chefs from Tossa show how to prepare traditional dishes with specialities from Tossa and Catalan cuisine: "cim i tomba", "calamars farcits i mandonguilles", "arròs de cabra", "arròs de paraigüero", "sípia amb pèsols", "mar i muntanya", "arròs negre", "fideus a la cassola", etc. Clients participate sharing both tables and food. Fideus amb peix
INGREDIENTS .
1 rock fish 2 paquets of noodles ½ bulb of garlic finely chopped olive oil 1 bunch parsley finely c hopped tomatoe finely chopped black milled pepper stock
PREPARATION : Clean the fish and cut into thick slices, add salt and keep to one side. Keep the head of the fish to make the stock. To make the stock put the fish head, 1 onion, 1 carrot, a piece of celery and water into a pot and leave to boil. Put oil in a casserole and add first the garlic ensuring it doesn’t turn golden, and then add the chopped tomato. When the tomatoes are dissolved, add the parsley and a little water. Add the sliced fish and leave to cook. When the fish is cooked take it out of the casserole and add the strained stock and noodles, leaving to cook for 10 mins. When the noodles are almost cooked add the fish and leave to cook for 5 mins more.
