Cooking courses
CUINA DE TOSSA: We hold a cooking course one afternoon a week. Two chefs from Tossa show how to prepare traditional dishes with specialities from Tossa and Catalan cuisine: "cim i tomba", "calamars farcits i mandonguilles", "arròs de cabra", "arròs de paraigüero", "sípia amb pèsols", "mar i muntanya", "arròs negre", "fideus a la cassola", etc. Clients participate sharing both tables and food. Suquet d'anxoves
INGREDIENTS . 1 tablespoon flour 2 ripe tomatoes (peeled) oil - salt - pepper – water 1 kg anchovies 1 garlic bulb 2 sprigs of parsley
PREPARATION :
Clean the anchovies running under water and leave to drain. In an earthware saucepan add the chopped garlic and when it starts to golden add chopped toma-toes and chopped parsley. When soft add the anchovies and cover with water letting it simmer. While waiting, in a glass dilute the flour and pepper with water and add to the pan 5 minutes before the fish is cooked.
