Cooking courses
CUINA DE TOSSA: We hold a cooking course one afternoon a week. Two chefs from Tossa show how to prepare traditional dishes with specialities from Tossa and Catalan cuisine: "cim i tomba", "calamars farcits i mandonguilles", "arròs de cabra", "arròs de paraigüero", "sípia amb pèsols", "mar i muntanya", "arròs negre", "fideus a la cassola", etc. Clients participate sharing both tables and food. Arròs de Paraigüero
INGREDIENTS .
1 large onion 2 or 3 tomatoes water (200 dl for every 100 gr rice) salt – oil 600 gr rice 150 gr kidney beans 6 slices bacon 350 gr black pudding
PREPARATION : Boil the kidney beans until soft and drain well, and put to one side. Cut the black pudding and bacon in small slices. Put the oil in a saucepan. When it's hot add the black pudding and bacon. When golden put to one side. Next fry the onion and tomatoes. When cooked add the rice and boiled water. When the rice is half cooked add the black pudding and bacon. Salt to taste. When rice is cooked it's ready to serve.
