Cooking courses
CUINA DE TOSSA: We hold a cooking course one afternoon a week. Two chefs from Tossa show how to prepare traditional dishes with specialities from Tossa and Catalan cuisine: "cim i tomba", "calamars farcits i mandonguilles", "arròs de cabra", "arròs de paraigüero", "sípia amb pèsols", "mar i muntanya", "arròs negre", "fideus a la cassola", etc. Clients participate sharing both tables and food. Gazpacho
INGREDIENTS .
1 bulb garlic 2 tablespoon oil 3/4 litre stock or water 3 tablespoons vinegar pepper - salt - cumin seed 1 pepper 200 gr ripe tomatoes 1 cucumber 100 gr bread crumbs
PREPARATION :
Wash the pepper, tomatoes and cucumber (all with skin). Slice them and then mix with hand blender. Add bread crumbs to thicken. Leave in fridge for 2 hours in a bowl. Crush the cumin seeds and garlic, mix in a mortar with the oil and vinegar. The bowl that's in the fridge add the stock and the mixture from the mortar. Mix everything well, adding salt and pepper to taste, drain through very fine sieve squeezing the ingredients well. Serve very cold.
